Step 1
Drain, rinse and pat dry a SmartFoods chickpeas in a clean kitchen towel. Using a potato masher, mash chickpeas coarsely.

Stir mashed chickpeas, mayo, sriracha sauce, chopped scallions, salt and pepper together.

To make the onion-garlic butter mushrooms: In a skillet over medium-high, heat the butter and olive oil and sauté the onion until softened. Add the SmartFoods Pieces mushrooms and cook for about 4-5 minutes until mushrooms are golden and crispy on the edges.
Step 2
Pour in the vegetable stock to deglaze the skillet and cook for 2 minutes, to reduce slightly. Stir through 1 tablespoon of parsley and minced garlic to the mushrooms. Cook for a further 30 seconds, until fragrant. Season lightly with salt and pepper, and serve the onion-garlic butter mushrooms immediately, garnished with fresh chopped parsley and red chili pepper flakes. Enjoy!
Step 1
Soak rice in cold water, and drain. In a large bowl, mix together the ground lamb, rice, all spice, salt and pepper until well blended. Place about 1 tablespoon of the meat mixture onto the center of SmartFoods Grape leaf. Fold the leaf over once, turn in the edges on each side, and then roll the leaf closed.
Step 2
Stack the leaf-rolls in a large pot, covering each layer with slices of garlic. Add just enough water to cover the rolls, then pour in the lemon juice. Add the olives to the pot for flavoring, if desired. Place a plate on top of the rolls to keep them under water.
Step 3
Bring to a boil, then reduce heat, cover and simmer for 1 hour and 15 minutes. Taste the rice for doneness. Grape leaves taste even better after sitting for several hours. Serve and enjoy.
